Our Story
Kombuchinnati Brewing Company started with a single glass jar on a kitchen counter and a question: what if kombucha tasted as good as it makes you feel?
Today we brew in small batches at our Over-the-Rhine brewhouse, using locally sourced tea, fresh fruit from Ohio growers, and the good old Cincinnati patience that comes with live fermentation.
Every bottle is alive with culture, naturally carbonated, and free from artificial anything. We don't rush the process — and we don't cut corners.

We let fermentation do what it does best. No shortcuts, no rush — just time, temperature, and a whole lot of love for the craft.
We start with loose-leaf tea sourced from small producers, steeped to perfection in Cincinnati's famously soft water.
Organic sugar meets our living culture — a SCOBY that's been with us since day one, passed down and cared for like family.
Real fruit, fresh herbs, or botanicals go into the vessel. The culture works for 7–14 days, transforming sweetness into something complex.
Bottled with a second fermentation for natural carbonation. Rested until the fizz hits just right, then poured into your glass.
